Does it proc stuff that triggers on creatures entering 5 times?

Nope, etb triggers don't count the number of creatures you control.

How does this work for targeting?

If I wanted for example, could I target this five times with [[Hex]] and one other creature?

Nope, Hex isn't counting how many creatures you control.

Why did you go with 5 kids, I thought the common 'saying' was 3 kids in a trench coat?

I'm not sure who named it that or why, sorry!

So if I counter one of the children does this still resolve?

The static ability only applies while it's on the battlefield!
