EOA +15 is quite easy compared to most other dungeons, the boatskip is really not needed. I do recommend to kill serpentix first and then the lady so you wont have winds or gulls to be aware of, this saves some time. Also when you continue after these 2 bosses, take the crabs with you to the entrance of the cave and wait for the murlocs there before continuing further to the goblins. The murlocs outside give some easy % too. (you might miss out on % if you do the boatskip). If it's Fortified for you this week (US?) then the 2 big guys in front of the 4th boss (giant) might be a bit of a pain in the ass on +15 if you're not super geared. I suggest using Invisibility potions to skip them.
as for the original question: imho a DH is always good to take along, solid AOE and ST. I wouldn't necessarily take one for the skip.

Do not do this, they have Truesight and see through stealth/invisibility.
What you can do instead, is to sacrifice one player who drags the giants against the wall to the right (the tank or someone with an immunity so they don't die too fast).
The rest of the group runs past mounted into the boss area (have them stay far away from the giants until they reset, so they don't accidentally get in combat with them).
Then the healer can Mass Rez the sacrificed player over the wall and you can be on your way.
MUCH safer than fighting them. Just get your 100% forces before then and you're good to go!
I don't recommend the boat skip unless you're familiar with exactly what monsters to kill beforehand, and familiar with how to do the skip very quickly - it's not necessary for most groups to beat the +15 timer.
