Polyphony Digital has recently updated the Gran Turismo website to include a full list of every car in Gran Turismo 7, exactly like how it would show up in-game. Ever since the game launched in March of 2022, new content has been added to the game on a consistent basis. The most recent update was only about three weeks ago, which added the NISMO R34 GT-R Z-Tune, and a very rare example of an SUV in the Gran Turismo series. As of that update, there are 539 cars in the game.
Cars can be sorted by either manufacturer name (in alphabetical order), country of origin (also in alphabetical order), drivetrain (weirdly not in alphabetical order), or by its power or weight descending.

As of right now, the most powerful car in the game is the Dodge SRT Tomahawk X VGT, and the least powerful is the 1968 Fiat 500 F. The heaviest car in the game is the 2021 Toyota Himedic, and the lightest car in the game is the Gran Turismo Racing Kart 125 Shifter.
Every car on the list is clickable, giving you a number of exterior and interior shots of the car, as well a brief description of its history and its specs.

Now, for gameplay, this feature is not that useful, but you're a car nerd like me, you will absolutely love to just click around every car to view its specs, screenshots and maybe learn a thing or two. If 90% of your brain is a car like mine is, you will lose so much time to reading everything you can about this.
