Keep the cheaper board control spells in mulligan so that you're able to fight back until you start getting minions out. Convincing Infiltrator and Sandhoof Waterbearer are solid minion keeps. Heal face until you complete the quest, then start the Priest madness.

What would you guys play without Zerek's? Grave rune maybe?

Not a bad option, especially if you can combo it with Archmage Vargoth. And yes Grave Rune stacks, I've sadly witnessed it.
Some lists choose to run Seance as well.
