If they switch the deck back, destroy their deck with Skulking Geist.
Now you can play Archivist Elysiana and make your own new deck to counter fatigue while your opponent is left with the cards he has in his hand.
You can play Hemet, Jungle Hunter after having drawn Explore Un'Goro to cycle through your deck faster.
