Dead man's hand is a Poker term, referring to a hand with two black aces and two black eights (black, hence the colour of Rogue) and any fifth card. It comes from folk hero Bill Hickok, who was killed during a game of Poker with that hand. The Hearthstone card is an obtuse reference to that, with a more direct Poker joke in the flavour text.
Agreed, which is why I put it under the substitution section. However, the meta is so tempo dominated that I think both might not be the best choice, and you're better off running something like Twin Tyrant or Evasive Drakonid instead.
Just to complain about something else for a change: why can't I jump to the last page in a thread in one click? I can only click the ... to load the next 5 pages, but there's not 'jump to end' button. There should be.

Game 1 - I (Priest) play Mindgames on turn 4 and pull Chromatic Egg. Brilliant, thanks!!! Quite simply was not able to overcome the tempo loss. Not an unfathomable beat, but really didn't get me off to a good start with what came next:
Game 2 - Again, don't play a lot of Arena but never in the 100+ games I've played over the past 2-3 years have I ever been offered two legendaries in one run. Not only did my opponent get (at least) two for their deck, they were BOTH Emperor Thaurissan. Did not know it was possible to get duplicate legendaries in Arena, so that's a fun way to learn new things! Oh and the icing on this particular shit cake was their turn 1 (plus coin) Transmogrifier I was unable to clear immediately the next turn, so on top of double Emperor they also got a free Illidan Stormrage. Honestly this is the single shittiest arena game I've ever had the misfortune of playing.
Game 3 - Despite my deck only have 10 cards costing 6 or more, guess how many of those 10 I got from the mulligan/drew in the first 6 turns? If you guessed 7(!!!), congratulations to you as well to the Hunter who had an actual hand with playable cards and had me SMOrced to nothing before I could play a single thing.
And to cap off an already garbage run, did my "reward" give me an amount of gold ending in 5 so now I have play another run or stare at unspendable gold until my eyes fall out of my head? You know it did!
ETA: Was the pack I got from my "reward" just a useless 40 dust-er? In fact was it the *9th* 40 dust-er pack *IN A ROW* I've gotten this week? I think you know where I'm going with this.
Wild is just... Wild?! So frigging wild that only the wildest wild decks (the top3/4) can survive on higher ranks. Maybe you are not wild enough anymore?
When you get older, it sometimes feels good to be "boring" or standard. After some hard matches against our beloved sniplock, bigpriest or secret ages it's incredibly refreshing to play 1 or 2 games against Galakrond Shaman. So... F*******... Refreshing...
Seriously, drop some ranks and play just fundecks. That's what I do right now (freeze Mage in standard, or Thief rogue)
I wouldn't be surprised if there is a "deck MMR" or something too. In other words, you build a deck and win a lot of games, the game sees that deck as good. It then tries to match you up against players with similar MMR that are also playing a deck with a higher winrate. Hence you were playing Zoolock, doing well, then you get hit with a bunch of Shaman opponents who are also winning a lot.
You build a brand new deck of HW Paladin, the game does not know yet how this deck will perform when you are piloting it. It matches you up against players that haven't been winning a lot, those Rogue players you mentioned. So until you show the game that you can win a lot with this deck, you may not see the Shaman onslaught you are targeting.
But honestly, I have no idea.
In other words, if this rambling of mine is even slightly correct: it's an attempt to balance player experiences, not a grand plot against you.
As a good player you may find yourself 'accidentally' climbing to rank 10. That's OK, but to actually enjoy the game mode try to avoid going any further.
I tend to shoot for Rank 10 in Wild (and Standard really) and from there I just play whatever I feel like. If I win, great! If I don't, it's just a game. If I happen to rank up to 5, sweet! The only time I really push to climb higher than 10 is if I happen to get close to the Rank 5 floor, then I might try a little harder.
The key to enjoying Wild, or really Hearthstone in general, is to not get too serious about it and just play whatever you want to play, even if it's a low winrate deck that you are trying to meme with. Like putting a TON of Corrupted Bloods into your opponent's deck and then using Wyrmrest Purifier to turn your Bloods into random class cards in a Memekkar Rogue deck.
So you can either try something different and new, or you can turn to a different game for a little while to get a break from HS if you're that annoyed with it. The thing I tend to turn to in Wild most often when I am no longer having fun playing the game: any sort of C'Thun deck. My favorite, which hasn't worked for a while now due to fast decks like Secret Mage, was a C'Thun Druid that used things like Aviana, Kun the Forgotten King, Brann Bronzebeard, and Zola the Gorgon to drop 3x 10+/10+ C'Thuns in a single turn and watch the eyeball missiles rain down as my opponent's watch in horror! Would be better if Aviana was still 9 mana, but that's what happens when I don't craft her until the nerf... No joke, I did that. Because I'm dumb... Still fun though.
TLDR: You can still find fun in the game if you just play silly decks to meme on people. If you aren't having fun, find something else to do for a while and come back to it.

I think any matchup bias at work could be determined across millions of games clearly, and of course such stats are available to some outside of Team 5/Blizzard so would be risky to do. I also think there's not a good reason for them to do it, especially if it could be discovered and revealed.
In my view people just suck (me included) at spotting statistically significant patterns of this type especially since HS is often an emotive gaming experience.

Yeah I do think he means the ladder system as a whole here so legend #1 doesn't play a rank 50 guy/gal.
I've never read they try to fiddle with a same rank matchup to ensure you get a 50% winrate. I've been able to get 85-90% winrate over 15 or so games sometimes at lower ranks.
Again, they've stated the exact opposite which I believe in the absence of proof to the contrary. The ladder system and meta environment as a whole acts to somewhat balance the matchups/winrates.
I do understand though sometimes it doesn't *feel* that way :)

Also, winrate in 15 games is completely irrelevant. If you could keep 90% winrate across 150 matches, then that would be whole another story. But you can't. No one can.
But since I still can't provide any HS developer statement that Hearthstone matchmaker works the way I described it, therefore I have no evidence so I must admit I was wrong.
Then again, you or anyone else outside Blizzard can't prove that what Max McCall said in that post is truth either. I guess, in the end, all we have is the way we *feel* about it ;)

Blizzard announced the nerf should hit during the week. I don't think they already fix all cards yet. I believe they are still gathering data on others cards that may create trouble in the meta such a the epic deathrattle. (I don't remember the name)
