I have faced a lot of Druid quest opponents and lost some of them but won more of them. My mage removal and refill and card-draw was just better, and more chances on real crazy bonkers op stuff happening. Their main problem: they can not remove and fill board at the same time, and have limited draw. So either they can remove your board and its your turn to fill it again leaving you on top, or they put something on the board with some choose-one spell. While other decks have powerful remove-and-play-minion options available (stuff with rush etc).
For instance the deck shown by RandomGuy: the highest stat on a minion in that deck is 5-10 or 10-5, while as a mage its not uncommon to summon several minions with stats >7-7 (mountain giants, 1-cost big minions using Luna, conjurer calling on some big dudes etc). So in theory the quest delivers nice cards to play, but the factual minions on the board are not that strong and easier to remove.
I haven't been playing quest druid, but I've faced a lot of quest druids today for some random reason. The strong quest druid players are the ones that hold onto their choose one cards until after they complete the quest. They know why those choose cards are in their decks and why they need both effects at the same time. This means that minion presence and minion removal is not too important if the player knows how to pilot the deck, especially with healing or with card draw. They can leave their side of the board empty until completing the quest and then flood the board with buffed minions all at once if they do it right. Give it some days and you'll find out that it's not so easy to beat, once the pilots get their licences

Hearthstone is heavily based around the lore of the WoW universe, does this incentivise you to try it or had you already played it before starting Hearthstone?
For me personally, Hearthstone introduced the Warcraft universe in an interesting way leading to me playing the game on a regular basis.
You have to play Warcraft 3: Reign of Chaos and it's expansion Warcraft 3: The Frozen Throne if you haven't done it yet (or wait for Warcraft 3: Reforged). The story/campaign is epic and the gameplay is pretty good. It's also the game that made me love elves in most fantasy settings, although I still hate almost all of the Tolkien (Arwen is one of the few exceptions) and Warhammer Fantasy "pointy ears" with passion. :P :P :P
Warhammer has some of the best elves ever created, especially the dark elves, Malekith, Morathi and Malus are so well written. I get High ones are dicks but they are supposed to be. Telcis, Alarielle and Alith Anar in particular are fricking awesome though. Tyrion is douchey no arguement there lol.
In terms of ladder viability, I couldn't care less I never play ladder anymore really. I wouldn't mind hitting the rank 15 floor though instead of being rank 20 all the time.

Shaman quest seems to be the most universally good quest and that will fit straight into a elemental/overload deck nicely so I might do that one first and have some fun with it.

This leaves me with many desirable quests, legendaries and epics to craft but I know that shit is super risky right now.
Here is a run down of what I need and would appreciate some opinions on whether they will be long term good or not.

Wild safe and Standard safe are 2 very different things.
I am more tempted to play wild more than ever but am missing the first few sets that rotated because I Thanosed them lol
I played WoW for long enough to get Liadrin or whatever her name is and disliked it so much I will never play it again.
Love the lore and characters and stories but the gameplay is just not for me. I even watch Taliesin and Evatel on YT to keep up to date with the game.

I did get him in gold fortunately as well as Collosus of the moon 😂.
Whilst I do love Priest I see that as one of the jankiest quests to pull off consistently.
Warrior quest I could skip as mech and taunt are both really solid .
Highlander stuff I do like but I think those decks are the highest risk right now.
The epics I will probably just do one copy of each.
