I cant get a match against the AI in the fireside
You CAN play against AI with Demon Hunter in solo adventures like Galakrond's Awakening. And you don't even need a Fireside Gathering for that. Just play in the normal client. I recommend Finley and Dr. Boom, they're fairly balanced.

Finley is too easy imo. Try Chenvaala instead.

That's the error that you are getting when you forgot to close fireside gathering. It's not about demon hunter. I got same happened to me with other classes as well. Try click to your fireside gathering and leave it. Then try to start again. That will fix your problem probably.
The error message that client gives when you try to play demon hunter which isn't available in a format is "This class is not active right now". The message you showed us with your screenshot is about fireside gathering. Not about Demon Hunter class.

Blizzard lied our hopes and memes died. *ahem* maybe it's just a bug of some kind? or maybe it has to be public? I'm not sure

It certainly isn't working currently, every time I try to start a game with a Demon Hunter deck I get an error message. Unless I am somehow doing something wrong.
I can't see any reason to support this. Why can't you just wait it up? 4 days is nothing. Even these days I'm still busy tackling Diamond 5 in ranked.

Okay, and it didn't go as they planned. No big deal. Whether you play it now or 4 days later makes no difference. Just wait it out.
You don't have to blurted it out and says Blizzard lied. Blizzard can't really monitor all the problems we faces, so, the better solution to play, is to wait it out.
EDIT. Or better yet, (If you'll die in 4 days and can't wait), get a ticket to blizzard for your problems.
Maybe it’s something to do with whether or not your client is fully updated? Maybe Solo Adventur only works on a computer?

it works for me too, just queue up one of the solo adventures and click on the demon hunter as your deck. Has worked over Naxx and Blackrock mountain normal and heroic.

We're using the deck that we got after prologue and I assume this is the only way. At least this is the working way which I am doing. Probably that's why you can't play. Just use the deck the game gave you. Don't try to use a deck that you copied to your game. Were you trying to use deck which is theorycrafted in some streams ? That won't work probably. Use the deck the game added to your collection. If you deleted it, say goodbye to your early access and just wait for actual release.
Step by step which I've done;
1-) Open Solo Adventures,
2-) Choose Galakrond's Awakening Heroic
3-) Choose the E.V.I.L campaign
4-) Choose Sir Finley
5-) Choose the Demon Hunter deck which game gave you, it was the first deck on my list so it should be the same for you aswell.
6-) Enjoy.

Just saw Almaniarra posted the exact step by step how to, Its exactly what I did.
I keep getting the same error as well and i'm not in fireside i made sure. Not that i desperately need to play DH right now just wanted to give it a go while i had opportunity. I can certainly wait it out for 3 more days.
It is strange as it worked for me even before the fireside did. I could not open my packs but play vs the IA at some early points.
Guess you will just have to wait 2 more days as I am doing for my packs (right now I am totally alone because of quarantine, so no point in opening them early for me as I cant play with anyone. And having 2 random golden legendaries from a greater pool feels better for me)
I've been using the solo adventures (NOT the Practice mode, btw) to level up DH to 24 so far. However I have not had any luck using that method for the last two days now. Not really a big deal since we'll have the full expansion in ~24 hours. Was nice to start the level up "ahead of time" but oh well. Looking forward to tomorrow.
