I played a ton of undead cards that summon undead and played half of my deck and the quest says I only summoned 5!
I think the quest only counts "Played" undeads. Not …

Actually, there is. If you play [card]Headmaster Kel'Thuzad[/card] and then 6 cats (for ex: [card]Lynx[/card], [card]Alleycat[/card]) you will get [card]Mr. Bigglesworth[/card] to your hand. :D

Divine Rager seems underrated. [card]Cursed Disciple[/card] was a really good card.
