As you said, the metagame hasn't really solidified, so I don't think there's too much point in trying to nail down which cards to look out for. Maybe Chempunk Shredder will be the next big thing in Piltover & Zaun decks, so that's be a 1-health breakpoint. Similar story for Death Lotus if self-damage decks somehow rise to the top. You could basically add all direct-damage effects and Challenger units to the list. Unless you want to update the list constantly to reflect what's being played the most at the moment.

The +3/+3 from Jeweled Protector is also slow: you need to have the target in hand when you play him, and you probably aren't playing that target on the same turn so its a delayed effect. Contrast with Avarosan Hearthguard, who conceivably can give ~20/~20 worth of stats for that same 5 mana but because most of those stats trickle out he goes from auto-include 3x to worthy consideration.
On the other hand, a spell targets a specific unit at that position.

A similar question came up in D&D regarding why some spells require that the caster be able to see the target. (You can't just shoot polymorph magic an an area and hope it hits something.) The lead rules designer explained that part of the spellcasting process involves connecting with the life force of a specific creature, often by visual means. If that connection is interrupted or can't be made in the first place, the spell fizzles.
That's all well and good for Mystic Shot, but some Runeterra spells like Culling Strike represent physical combat maneuvers. For those, I just imagine that the Living Shadow appears in general area just far enough out of position to mess up the "caster's" aim, but not so far that the other unit can't fight it.
I suppose this latter explanation work for pew-pew spells, too, but whatever.
I'm mostly happy with the patch changes, although I have a feeling that Rhasa and Ledros will still be stupid strong.
Was also very surprised at the hefty buff to Jeweled Protector - total stats of 7/7 for 5 mana seems a bit crazy (I would've reduced the hand buff to +2/+3, myself). I might just pick him back up for my control deck.

Have you considered trying a deck that isn't actively bad against that boss? An OTK is pretty worthless if you're overrun before you assemble it. Go more aggressive, the most important part of bosses with unfair abilities, or heroic bosses in general, is to stem the bleeding and stabilise as quickly and efficiently as possible.
Ignoring the debate about the OP's sanity, I think the patch changes to XP were pretty much spot-on. For the past 2 weeks, I've slowly been feeling pressured into grinding out as many expeditions as possible due to the high bonus XP rewards. This has actually diminished my enthusiasm to try playing constructed. Now I might just invest a bit more time into building and playing my own decks.
I am so sick of Expeditions at this point, I may not even use my token this week.
But they did make those balance changes ... maybe I'll be ready for it by the weekend.
Wrapped Golem it is JFK! You've got most of the logic correct - the "explorers" clue was a double-hint: because the Golem was from Saviors of Uldum and Obsidian Destroyer was from League of Explorers - so both "explorer" sets.
And by Wild I mean any Wild card: adventurers or rotated sets, though the clue does mention "explorers" so perhaps that means something (or even BOTH somethings)...?

Though to qualify that - it is NOT a reprint of the same character (like Deathwing/Malygos/Ysera); its a reprint in that it has the same effect and (mostly) same stats
I'm happy to see both Commander Ledros and Deny nerfed, even if not in a way I like. At last it means that even Riot aknowledge that they were problematic previously.
