I opened an extra Whelp in my Tavern Brawl pack, and decided to flip to Wild when I searched "refund" and to my surprise there were some Stormwind cards in there.

I'm surprised they're still selling Mercenaries bundles. Same as you, I never bought any with actual money, and then when the mode hit a point where you had to re-download all the components I decided that was the right time to stop.

I have no memory of the Apprentice Ranks. There was, at one point, a progress bar under each class as you levelled them up and unlocked class cards, maybe that was it.
The new track looks great! I hope it's in addition to the seasonal rewards track (not replacing it) so new players don't miss out on all the fun.
Order in the Court will no longer draw a card. Might also cost one mana more.
Blindeye Sharpshooter will drop "Then switch" from its text.
Always a Bigger Jormungar will see a mana increase, but this will solve nothing, as the problem is the fact that it can also hit adjacent minions. How would the text limit that?
The Azerite Snake will become an end of turn effect.

My starting question: what is Gold Rush asking us to do? It says "Strike gold with Gold Panner" so I tried it in a deck with plenty of golden cards, but either this one is bugged or it does not mean "use Gold Panner to draw a golden card".
It's possible that mass opening the Catch up packs would give you the best chance, it depends when the recalculation of your collection percentage happens.
My percentages are similar. I assume we'll get 2, maybe 3, cards from each expansion. 10-15 cards per pack, at least 2 packs, probably mostly duplicate commons/rares, but hey, that's at least 160 dust that I wasn't expecting.
You and I aren't the target audience for Catch-up.

I tried tossing the Sludge cards into the base of the Undead Warlock deck, and was not too impressed with the results. What are you running?

When Keeper's Strength was announced, I thought: this won't see play since Paladins don't want to clear their own boards.

I got it on a non-Legendary card, it did turn gold in the drawing process, and I think it was the second card Lil Dude managed to draw.

Have you gotten this one to work?
Leaving the snake on the board also opens up the possibility that your opponent will steal it, via Sylvanas or similar.
And from Blizzard's perspective, yes, it's a change, but less of a nerf than some of the other suggestions mentioned here.
I think the problem is the bouncing. It's interesting to have a card that addresses health while ignoring armor.
A possible fix: instead of a battlecry, the text becomes "At the end of your turn, steal 10 health from your opponent."

I'll give Highlander Pirate Rogue a try (the endless horse deck is more annoying than I usually care to be).
I'm currently diamond 10 in Wild, so we'll see if this can get me to Legend!
